Wild apple fruit tea
Ingredients:
- 2 teaspoons dried wild apples
- 1 teaspoon hibiscus flowers
- 1 teaspoon rosehip peel
- 1 teaspoon dried orange peel
- 1 teaspoon cinnamon sticks
- 4 cups water
- Optional: honey or maple syrup
Directions:
- Place the dried wild apples, hibiscus flowers, rosehip peels, orange peels and cinnamon stick pieces in a tea strainer or tea ball.
- Bring the water to a boil in a kettle or saucepan.
- Pour the boiling water over the tea ingredients and cover.
- Let the tea brew for about 5-10 minutes, depending on your preference, to achieve the desired taste.
- Sweeten the tea as desired with honey or maple syrup.
- Pour the finished tea through a tea strainer into cups and enjoy the pleasant blend of aromas.
Dried wild apple granola bars
Ingredients:
- 1 cup oatmeal
- 1/2 cup chopped nuts (e.g. almonds, walnuts)
- 1/4 cup finely chopped dried wild apples
- 1/4 cup honey or maple syrup
- 1/4 cup peanut butter or almond butter
- 1 teaspoon vanilla extract
- A pinch of salt
Directions:
- In a large bowl, combine oats, chopped nuts and finely chopped dried wild apples.
- In a saucepan, heat honey (or maple syrup), peanut butter, vanilla extract and a pinch of salt over medium heat until the mixture becomes smooth.
- Pour the honey-peanut butter mixture over the dry ingredients and mix thoroughly.
- Press the mixture into a baking dish lined with baking paper and form it into a compact layer.
- Allow the mold to set in the refrigerator for at least 2 hours before cutting the mixture into bars.
Wild apple chutney
Ingredients:
- 1 cup coarsely chopped dried wild apples
- 1 chopped onion
- 2 chopped garlic cloves
- 1 teaspoon grated ginger
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon chili flakes (to taste)
- 1/4 cup apple cider vinegar
- 1/4 cup water
- Optional: 2 tablespoons brown sugar
- Salt to taste
Directions:
- Soak the roughly chopped dried wild apples in a bowl of warm water until soft (about 20-30 minutes). Drain.
- In a pan, sweat the onion, garlic and ginger in a little oil.
- Add the spices (cinnamon, cumin, coriander, turmeric, chili flakes) and roast them briefly.
- Add the drained wild apples, apple cider vinegar, water and optional brown sugar.
- Let the chutney simmer for about 20-30 minutes until the mixture thickens and the flavors combine.
- Season with salt and let the chutney cool. It keeps well in the fridge and is perfect with cheese, meat or as a spread on bread.
