Directions:

  2. Heat a skillet over medium heat and fry the marinated shrimp for 2-3 minutes per side, until pink and cooked through.

Carrot-ginger soup

Ingredients:

  • 500 g carrots, peeled and sliced
  • 2 tbsp chopped ginger
  • 1 onion, diced
  • 1 garlic clove, chopped
  • 1 litre vegetable stock
  • 1 potato, diced
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Cream or coconut milk (optional)

Directions:

  1. Heat olive oil in a large saucepan and sauté onions, garlic and ginger until soft.
  2. Add carrot slices and potato cubes and fry for another 5 minutes.
  3. Add the vegetable stock and bring to the boil, then reduce the heat and simmer for 20-25 minutes until the vegetables are soft.
  4. Puree the soup until creamy, adding cream or coconut milk if necessary to refine the consistency.
  5. Season with salt and pepper and serve hot.
