Freeze-dried raspberry power bars
Ingredients:
- 1 cup freeze-dried raspberries
- 1 cup dates, pitted
- 1 cup nuts (e.g. almonds, cashews or walnuts)
- 1/4 teaspoon vanilla extract
- A pinch of salt
Preparation:
- Process the freeze-dried raspberries in a blender or food processor until they form a fine powder.
- Add the nuts and continue mixing until they are roughly chopped.
- Add the dates, vanilla extract and a pinch of salt and mix again until the mixture comes together to a sticky consistency.
- Place the mixture on a flat surface and form into an even layer.
- Cut the mixture into rectangular bars and let them set in the fridge before serving.
Freeze-dried raspberry parfait
Ingredients:
- 1 cup freeze-dried raspberries
- 2 cups Greek yogurt
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- Muesli or roasted nuts for decoration
Preparation:
- Process the freeze-dried raspberries in a blender until they form a fine powder.
- Mix the Greek yogurt, honey or maple syrup and vanilla extract in a bowl.
- Divide half of the raspberry powder mixture into glasses or bowls.
- Pour a layer of the yoghurt mixture over the raspberry mixture.
- Add the remaining raspberry mixture as another layer over the yoghurt.
- Garnish with muesli or roasted nuts.
- Chill the parfait for a while before serving so that the flavors can blend well.
Freeze-dried raspberry smoothie bowl
Ingredients:
- 1 cup freeze-dried raspberries
- 1 frozen banana
- 1 cup milk (or plant-based milk)
- 1 tablespoon almond butter or peanut butter
- Toppings of your choice: fresh fruits, nuts, seeds, coconut flakes, etc.
Preparation:
- Process the freeze-dried raspberries in a blender until they form a fine powder.
- Add the frozen banana, milk and almond butter and blend everything into a creamy smoothie.
- Pour the smoothie into a bowl.
- Decorate with your favorite toppings such as fresh fruit, nuts, seeds or coconut flakes.
- Serve immediately and enjoy.
