Nettle tea with lemon and honey
Ingredients:
- 1 teaspoon nettle leaves
- 1 cup water
- Juice of half a lemon
- 1 teaspoon honey (optional)
Preparation:
- Put the nettle leaves in a cup.
- Bring water to a boil and pour over the nettle leaves.
- Cover and let it steep for about 5-10 minutes.
- Add lemon juice and honey to taste. Enjoy the tea warm.
Nettle soup
Ingredients:
- 2 cups nettle leaves
- 1 onion (diced)
- 2 potatoes (peeled and diced)
- 1 litre vegetable stock
- 2 tablespoons olive oil
- Salt and pepper to taste
Preparation:
- Heat olive oil in a pan and sauté the onion until it is translucent.
- Add the potatoes and fry briefly.
- Add the vegetable stock and bring to a boil. Reduce the heat and simmer until the potatoes are tender.
- Add the nettle leaves and simmer for another 5 minutes until tender.
- Puree the soup until creamy. Season with salt and pepper.
- Serve hot and garnish with a dash of cream or a splash of lemon juice if desired.
Nettle Pesto
Ingredients:
- 1 cup nettle leaves
- 1/2 cup toasted pine nuts
- 1/2 cup grated Parmesan cheese
- 2 garlic cloves
- Juice of half a lemon
- 1/4 cup olive oil
- Salt and pepper to taste
Preparation:
- Combine all ingredients except the olive oil in a blender or food processor.
- While blending, slowly add the olive oil until a smooth paste forms.
- Season with salt and pepper. The pesto can be used with pasta, on bread or as a dip.
Nettle salad
Ingredients:
- 50 g dried nettles
- 200 g fresh young nettle leaves (please pick with gloves)
- 1 tomato, diced
- 1/2 red onion, finely chopped
- 1 cucumber, diced
- 50 g feta cheese, diced or crumbled
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Preparation:
- Pour boiling water over the dried nettles and let them steep for about 10 minutes. Then drain well. If you are using them dry, lightly toast them in a pan without oil until they are crispy. This will add extra texture and flavor to the salad.
- Wash the fresh nettle leaves thoroughly and remove the stems. Use gloves to do this, as nettles have stinging hairs that can irritate the skin. Then roughly chop the leaves.
- In a large salad bowl, combine the fresh nettle leaves, dried nettles, diced tomato, chopped red onion, diced cucumber and feta cheese.
- In a small bowl, mix the olive oil, lemon juice, salt and pepper to taste. Pour the dressing over the salad.
- Toss the salad gently to ensure the dressing and ingredients are evenly distributed and then enjoy!
