Elderflower iced tea
Ingredients:
- 4 teaspoons dried white elderflower
- 1 litre of water
- Honey or agave syrup (to taste)
- Juice of 1 lemon
- Ice cubes
- Fresh mint leaves (for garnish)
Preparation:
- Bring the water to the boil and add the dried elderflowers.
- Let the tea brew for 10 minutes and then strain.
- Allow the tea to cool and sweeten with honey or agave syrup as desired.
- Add the lemon juice and stir well.
- Pour the iced tea into glasses with ice cubes.
- Garnish with fresh mint leaves and enjoy cold.
Elderflower smoothie
Ingredients:
- 1 cup elderflower tea (cooled)
- 1 banana
- 1 cup frozen berries (e.g. strawberries, raspberries)
- 1/2 cup Greek yogurt
- 1 tablespoon honey or maple syrup (optional)
Preparation:
- Place the cooled elderflower tea, banana, frozen berries and Greek yogurt in a blender.
- Mix everything into a creamy smoothie.
- Sweeten with honey or maple syrup as desired.
- Pour the smoothie into a glass and enjoy immediately.
Elderflower lemonade
Ingredients:
- 2 cups elderflower tea (cooled)
- 1 cup sparkling water
- Juice of 2 lemons
- 1/4 cup honey or sugar (to taste)
- Ice cubes
- Lemon slices and fresh mint leaves (for garnish)
Preparation:
- Mix the cooled elderflower tea, lemon juice and honey or sugar well in a jug.
- Add the sparkling water and stir gently.
- Pour the lemonade into glasses with ice cubes.
- Garnish with lemon slices and fresh mint leaves.
- Serve cold and enjoy.
Elderflower jelly
Ingredients:
- 2 cups elderflower tea
- 2 cups apple juice
- 1 pack of gelling sugar (for 1:1 ratio)
- 1 tablespoon lemon juice
Preparation:
- Pour the elderflower tea and apple juice into a large pot.
- Add the gelling sugar and lemon juice and mix well.
- Bring the mixture to the boil, stirring constantly, and let it simmer for 3-4 minutes.
- Do a gelling test: Put a teaspoon of the jelly on a cold plate and see if it sets.
- Pour the jelly into sterilized jars and seal immediately.
- Turn the jars upside down and let them stand for 5 minutes, then turn them over and let them cool completely.
