Goji berry smoothie
Ingredients:
- 1 banana
- 1 cup fresh or frozen berries (e.g. strawberries, blueberries)
- 2 tbsp goji berries
- 1 cup almond milk (or other milk of your choice)
- 1 teaspoon honey or maple syrup (optional)
- 1 tsp chia seeds (optional)
Directions:
- Peel the banana and cut it into pieces.
- Place the fresh or frozen berries into a blender along with the goji berries.
- Add the banana pieces.
- Add almond milk and optionally honey or maple syrup.
- Mix everything well until a smooth consistency is achieved.
- If necessary, add chia seeds and stir briefly.
- Pour the smoothie into glasses and garnish with a few goji berries.
- Enjoy immediately.
Goji berry quinoa salad
Ingredients:
- 1 cup cooked quinoa
- 1/4 cup goji berries
- 1/4 cup chopped almonds
- 1/4 cup chopped fresh parsley
- 1/4 cup diced cucumber
- 2 tbsp olive oil
- Juice of half a lemon
- Salt and pepper to taste
Directions:
- Place the cooked quinoa in a bowl and let it cool.
- Add the goji berries to the quinoa and mix lightly.
- Add almonds, parsley and cucumber cubes and fold in carefully.
- In a small bowl, combine olive oil, lemon juice, salt and pepper to make the dressing.
- Pour the dressing over the quinoa salad and mix well.
- Let the salad sit for about 15-20 minutes to allow the flavors to combine.
- Stir again before serving and garnish with additional goji berries if desired.
- Enjoy as a light lunch or side dish.
